Baumard Clos de Sainte Catherine, a French Loire wine, has a bright to deep golden yellow color with silver sparkles. Rich and complex of flavors, with honey, pear, apricot, spring blossom and mineral undertones. On the tongue pure purity, minerality, ripe fruit, a hint of herbs, an excellent balance between sour and sweet, a lot of elegance and a huge length.
Pairs well with melon and jambon de Bayonne, patties and terrines of poultry, poultry liver cakes, cold fatty goose liver, chaud-froid from outer run farm chicken. At the desserts, absolutely avoid: chocolate, red fruit, oranges and apples! Recommended: poached peaches, apricots or pears cakes, lightly baked almonds and / or almond paste, cream anglaise, protein foam cakes or baked cakes (vacherin). The Clos Sainte Catherine is located just above Rochefort sur Loire. On clear sky days you can enjoy stunning views from Angers in the east to the border with Brittany in the west. Vinification (winemaking): for this classic cuvée wine, the grapes are hand-picked from older vines. Only overripe and/or botrytis-blessed grapes are harvested, in several successive pickings. After the pneumatic pressing, fermentation takes place in stainless steel tanks, under controlled temperature. This wine falls under the category 'moelleux' (note: pronunciation = 'môaleuh', and not 'moeijeuh'!), which indicates a relatively (slightly) sweet wine with a good sweet/sour balance.

Baumard is located in the heart of the Anjou, in the town of Rochefort-sur-Loire, just south of Savennières. The domain has been family property since 1634. Where Jean Baumard developed it in the fifties, his son Florent has ensured that it is today considered one of the best wine producers in the Loire Valley. Florent is seen by many leading wine magazines as the only one of its kind. He makes several cuvées from Savennières, the large dry chenin blanc, in addition to very beautiful Coteaux de Layon. The domain works organically, without certification. Florent Baumard believes that human intervention in both vineyard and wine cellar should remain possible. His Quarts de Chaume is a real icon in the international wine world; this vineyard has recently been elevated to grand cru status!
