The vines get their minerals from the depths of the marl of old entroque limestone, the same limestone that forms the Roche de Solutré. The resulting wines develop a clever blend of aromas of exotic fruits and minerals.

This wine was aged on the lees for 11 months then re-mashed before bottling, no fining (suitable for vegans) and very light filtration before bottling (may have a slight tarnish). Fermentation took place in oak barrels using indigenous yeasts (100% oak barrels, of which about 25% are new barrels). Age of the vines: Average 50 years.
