Hajszan Neumann Nussberg Riesling
Hajszan Neumann Nussberg Riesling has a straw yellow color with a hint of green. In the nose aromas of lime, peach, papaya, lime and flower honey. In the taste palette notes of lemon, mandarin peel, granny smith and tropical fruits, accompanied by an intense mineral aftertaste with tight fresh acidity.
The grapes are picked by hand from the end of August to mid-September, with a very strict selection. In the vinification cellar, the bunches are given a cold soak for 6 hours. This is followed by pressing and the juice is allowed to undergo a spontaneous fermentation with wild (grape's own) yeasts in stainless steel tanks. The young wine is then transferred to clean stainless steel tanks for malolactic fermentation and aging on the lees. After about 8 months, the wine is assembled and bottled after very light filtration. This process takes place entirely according to strict biodynamic vegan rules and regulations.

This white wine is a nice aperitif and pairs well with oysters, trout, wild salmon, zander, salads, fresh goat's cheese, pasta and mild Asian dishes.
