iLauri Tavo Pinot Grigio
The famous Pinot Grigio variety has been known in the Burgundy region since the Middle Ages and is derived from a mutation of the Pinot Noir. The name Tavo comes from one of the most important rivers in this area, which has its source at almost 2,000 meters at the foot of the Gran Sasso.
The grapes for Tavo come from a leased vineyard located at an altitude of 300 meters between the cities of Verona and Venice. The grapes are harvested by hand at the end of August. In the vinification cellar, they are immediately destemmed and lightly crushed, followed by a 24-hour cold soak. This is followed by a gentle pneumatic pressing and the juice is allowed to undergo a temperature-controlled (16°C) alcoholic fermentation in stainless steel tanks with specially selected yeasts. After about 10 days, the young wine is transferred to clean stainless steel tanks and allowed to rest for 2 months without malolactic fermentation. Then the wine is assembled, clarified, lightly filtered and bottled.
