La Crema Monterey Chardonnay has a bright yellow color. In the nose exotic scents of lemon, grilled pineapple and guava followed by aromas of nectarine, papaya, lemon, mandarin and a touch of spice. Crispy, nice acidity and minerality.
Monterey consists of a long valley stretching from the uniquely cold Monterey Bay to the extreme southeastern reaches of the Salinas Valley. An ever-present breeze and maritime influences from the ocean provide cooling over the vast rolling vineyards. The fruit for this wine comes from multiple vineyards in the Monterey appellation, including Gravelstone and Clark vineyards. The vineyards in North Monterey bring juicy fruit notes, while the vineyards in the South bring riper fruit flavors.
After the grapes are picked, they are gently pressed and rested for 24 hours before being placed in a mix of French and American oak barrels for fermentation. A small portion of the wine is put into stainless steel tanks for fermentation, adding juicy acidity and aromas to the wine. The wine then matures for another 6.5 months in oak barrels.
Classics include cracked crab, lobster, shrimp and scallops prepared in a buttery, creamy sauce. A simple roast chicken. Butternut squash risotto is a brilliant choice. A bottle of Chardonnay will even last into the dessert course. Try it with Key lime pie for a taste sensation.
