Pieropan Soave Classico is clear, sparkling straw yellow in color with a green tinge. A delicate nose with nuances of almond blossom and real marzipan. Rich and complex fruit notes, well balanced by a refreshing acidity that also provides extra length in the aftertaste.
The grapes are picked by hand, in several sessions in order to harvest the perfectly ripe grapes each time. Soft, pneumatic presses separate the juices from the skins. After a short settling period of 2 days, the juices are transferred to stainless steel tanks with temperature control. At 20°C, the juices ferment very slowly. The young wine is given time to develop and is only filtered and bottled in the spring. After a further 2 months of rest in the bottle, the wine is ready for sale.
The Soave wines from Pieropan are seen as textbook examples of top quality from this region. Pieropan sells medals and prizes, both nationally and internationally.
It makes an excellent partner for soups, starters, especially vegetable based such as asparagus, peas, courgette, egg-based dishes or seafood and fresh water fish dishes. It is an excellent aperitif, especially when served with simple canapés.

The Pieropan business was founded in 1880 in the heart of the medieval village of Soave, in the historic Palazzo Pullici. Four generations marked the history of the company, each with their own contributions which varied according to the times, knowledge and entrepreneurial attitude. The wine business started with Leonildo, physician of Soave, who was driven by knowledge in biology and chemistry and began working in the family vineyards and whose work in the cellars was carried on by his sons, Fausto and Gustavo who worked with infinite passion.
