Salentein Single Vineyard Las Sequoias San Pablo Chardonnay comes from the San Pablo Estate winery, which is located 1605 meters above sea level in the Uco Valley. The vineyard was planted in 2002 with Chardonnay at a density of 10,000 vines per hectare.
The vines are irrigated with pure meltwater from the Andes. The soil consists of sandy loam with a high percentage of clay. Excellent drainage and low fertility. The grapes are harvested by hand in plastic containers.
The oxidative method was used to make this wine. The bunches are pressed in their entirety and the must is removed before fermentation. The fermentation is carried out at a temperature between 18 and 20 degrees Celsius. The wine has matured in French oak barrels. Intense and complex aromas. Nice, greasy wine. The mineral character as well as the excellent natural acids result in a unique wine, just like the terroir from which the grapes come.
Perfect to enjoy with special dishes such as southern hake with sauteed rice and green onion, or prawn and cuttlefish risotto.
