Badia a Coltibuono Chianti Classico Riserva has an intense ruby red color. Elegant balsamic notes in the nose, fused with floral aromas, cherries on alcohol, licorice and chocolate. In the mouth, a warm, very pleasant feeling prevails, with a good balance between the fresh acidity and the full, generous structure.
The grapes are picked by hand and vinified separately. Only natural, indigenous wild yeasts are used for fermentation. The alcoholic fermentation takes about 10 days. The young wine then remains on skins and sediment for at least another 3 weeks. During this period, the shell cap is mechanically immersed twice a day (‘follatura’). The aging in barriques and large barrels of French and Austrian oak lasts 24 months. This is followed by a rest period of 4 months in bottle.
This red wine is a great companion of grilled red meat, poultry, roast of white or red meat and firm minestrone. Also ideal for parmigiano reggiano and other matured hard (Italian) cheeses.
