Badia a Coltibuono Chianti Classico has a full ruby red color. Broad aromatic palette with nuances of irises, violets, fresh black cherries, tobacco and black pepper. Tight attack, with a good balance between fruit, alcohol, acid and tannins. Lots of juice and freshness on the palate, followed by a full, warm and persistent taste, with aromas of red fruit, leather and roasted coffee notes, closed by elegant mineral notes.
The grapes are picked by hand. Only native, wild yeast is used for fermentation. Without pumps, the grapes are processed using natural gravity. The vinification is very traditional, starting with a maceration on the skins of at least 3 weeks. Regular immersion of the husks (‘follatura’) increases the content of anthocyanins (blue/red dye), tannins and aromatic precursors in the must. After fermentation, the young wine is aged for 12 months in large barrels (15-25 hectoliters) made of French and Austrian oak.
This red wine is a great companion of grilled red meat, poultry, roast of white or red meat and firm minestrone. Also ideal for parmigiano reggiano and other matured hard (Italian) cheeses.
